Hot Honey Lemon Pepper Wings

2 lbs wings

Lemon pepper seasoning

 

Wet Batter:

2 cup chickpea flour

2/3 cup tapioca flour

1 tsp baking powder

1 tbsp Lemon pepper seasoning

Thai Chili Peppers

1 cup water

 

Honey Lemon Sauce:

4 tbsp butter

Juice of half lemon

1/3 cup Thai Chili Honey

1 tsp chopped garlic

2 tsp lemon pepper seasoning

Salt to taste

 

  1. Season the wings with lemon pepper seasoning. 
  2. Combine everything of the wet batter and start with 1 cup water and slowly add in more water until you get a thick consistency that smoothly falls off the spatula. 
  3. Dredge the wings in the wet batter. If the batter is done right, then you all or 90% of the batter should stick to the chicken. 
  4. Fry at 350F until golden brown. 
  5. For the lemon lemon sauce melt butter on a medium heat pan and combine all the ingredients. Simmer for about 1-2 mins. Let it cool and it will thicken back up. Taste and adjust for salt. 
  6. Mix the sauce and chicken together.
